Hello again, so sweet to have you here. Let’s get baking!
My son requested these and so I had to deliver. I paired them with vanilla buttercream, but a chocolate cream cheese would really be delicious. (Any frosting really!)
Chocolate Cupcakes
Here’s the recipe:
2 Eggs
½ Cup Unsalted Butter
½ Cup Sour Cream (room temp.)
2 tsp Vanilla Extract
¼ tsp Salt
1 tsp Baking Powder
½ tsp Baking Soda
¾ Cup Granulated Sugar
½ Cup Unsweetened Cocoa Powder
¾ Cup All Purpose Flour
2 Ounces Semi-Sweet Chocolate (baking bar, my preferred is Ghirardelli)
Directions:
1. Preheat oven to 350 degrees
2. Prep cupcake pan (yields 12 cupcakes)
3. Melt butter and semi-sweet chocolate together
4. In separate bowl, whisk eggs, vanilla, sour cream, and sugar until smooth
5. In separate bowl sift dry ingredients
6. Whisk cooled butter mixture in egg mixture until smooth
7. Slowly add dry ingredients until just mixed (batter will be thick)
8. Scoop & Bake for about 15 minutes
9. Let cool and add frosting of choice or simply enjoy!
