Sundae Scoop #4
Another
sundae scoop recipe for y’all today. These lemon sugar cookies are my favorite non
chocolate cookie. I had to make a small batch because I could eat them all.
This
recipe makes about 8 to 12 depending on your cutter size.
Small
Batch:
1
Cup All Purpose Flour
1/3
Cup Granulated Sugar
¼
Teaspoon Baking Powder
¼
Teaspoon Salt
1/3
Cup Unsalted Butter
½
Teaspoon Vanilla Extract
1
Tablespoon Fresh Lemon Juice
1
Egg Yolk
(You can add a little lemon zest if you want it even more
lemony.)
Preheat
oven to 350 degrees
In
separate bowl mix together flour, baking powder, salt
In
mixing bowl, cream together butter and sugar
Add
egg yolk & vanilla until incorporated
Then
add in lemon juice
Add
about half the flour mix until incorporated
Then
mix in the rest
Roll
dough out on floured surface
(I
place on parchment and refrigerate for about thirty minutes. This helps my cutouts
bake with no spread.*)
Then
cut out cookies and bake for about 8 to 10 minutes. Depends on cutter size of
course.
