Putting the Sweet in Sweet Potato

It is finally Fall here in the desert, and naturally I am baking all the things. Here are a few of the recipes we have been enjoying. I even added a vegan recipe that surprised even me!

Vegan Sweet Potato Donuts

½ Cup of Sweet Potato (Roasted & Mashed)

1 ½ Cup of Flour

¼ Cup Unsweetened Applesauce

¼ Cup of Brown Sugar

¼ Cup Sugar

1 teaspoon Cinnamon

¼ teaspoon Nutmeg

½ teaspoon Baking Soda

1 teaspoon Baking Powder

1/8 teaspoon Salt

Directions:

1.      Preheat oven to 350 degrees and grease donut pan

2.      Mix sweet potato mash and applesauce

3.      In separate bowl whisk dry ingredients

4.      Add dry ingredients to wet until a sticky dough formed

5.      Pipe mix into donut pan

6.      Bake for about 8 minutes (DO NOT OVER BAKE)

 

I used a vegan royal icing recipe on A Beautiful Mess blog. I piped it on and sprinkled a pecan cinnamon sugar mix.

 

Sweet Potato Cupcakes

1 Cup Sweet Potato (Roasted & Mashed)

2 Cups Flour

1 teaspoon Baking Powder

1 teaspoon Baking Soda

¼ teaspoon Nutmeg

1 teaspoon Cinnamon

1 teaspoon Vanilla Extract

1 Cup Brown Sugar

1 Cup Sugar

1 Cup Oil

Directions:

1.      Preheat oven to 350 degrees and prep muffin tin.

2.      Whisk dry ingredients in bowl

3.      Add in sweet potato and oil

4.      Mix until just combined

5.      Bake for about 15- 18 minutes


 

These cupcakes pair so well with a cinnamon cream cheese frosting or a meringue if you want toasty vibes. I used just a colored vanilla buttercream. I flat frosted them then used a round tip to pipe the scallop pie crust sides. For the lattice look I used a basket weave tip. Then finally an open star for the whip topping.

Sweet Potato Biscuits

1 ¾ Cup Flour

2 ½ teaspoon Baking Powder

½ teaspoon Baking Soda

2 Tablespoon Brown Sugar

¼ teaspoon Salt

6 Tablespoon Unsalted Butter (Diced up)

About ¾ - 1 Cup Sweet Potato (Roasted & Mashed)

1/3 Cup Buttermilk

1/2 teaspoon Ground Cinnamon

1/4 teaspoon Ground Nutmeg

Directions:

1.      Preheat oven to 350 degrees and line baking sheet.

2.      Whisk dry ingredients

3.      Add sweet potato and buttermilk

4.      Mix until just combined then turn out on floured surface (It will look a bit crazy at this step)



5.      Knead the dough until it comes together



6.      Cut out biscuits and bake for about 15 to 20 minutes

These pair with pretty much any fall flavor profile. They are so good, and I have my friend Grace to thank for the introduction to these life changing biscuits.
